The process of harvesting and processing coffee beans is a long process that is already being handled by friendly Costa Rican farmers.
Coffee beans turn red immediately after harvesting. In most varieties, this color is a signal to the farmer about the appropriate maturity of the coffee beans. It's harvest time.
Our coffee beans are harvested by hand. It is a very time-consuming harvesting method, as it consists in manually peeling the fruit of each tree on the plantation. Then a preliminary selection is made and the grains are transferred to the next processing.
The coffee that we import from Costa Rica is dried naturally on special tables in very sunny places for 21 days! The coffee tree cherries are turned regularly so that they dry evenly, this process also prevents the fruit from fermenting. This is called dry method of treating coffee.
